Low Carb Quiche

Delicious low carb quiche in 45 minutes.

Ingredients

  • 3 extra large eggs
  • 250ml fat free milk
  • 10ml oil
  • 1 onion, finely chopped
  • ½ green pepper, finely chopped
  • 2 teaspoons dried oreganum
  • 60g lean bacon, chopped (2 rashers, back or leg bacon)
  • 1 tomato, chopped
  • 180g lean ham, chopped
  • 3 tablespoons chopped parsley
  • Freshly ground black pepper to taste
  • 5ml Dijon mustard
  • 3 tablespoons cake flour
  • 125ml low fat cottage cheese

Method

  1. Pre-heat the oven to 180°C and lightly grease a 200 x 200cm ovenproof dish with non-stick cooking spray.
  2. Beat the eggs and milk together and set aside.
  3. Heat the oil and sauté the chopped onion and pepper until soft. Add the chopped bacon and fry until crisp. Add the chopped tomato and stir through.
  4. Add the rest of the dry ingredients (except the cheese), as well as the egg-milk mixture.
  5. Pour the filling into the greased dish and sprinkle the cheese evenly over the top.
  6. Bake for 45 minutes until the filling is set.
