Low Carb Quiche
26 August 2022Delicious low carb quiche in 45 minutes.

Ingredients
- 3 extra large eggs
- 250ml fat free milk
- 10ml oil
- 1 onion, finely chopped
- ½ green pepper, finely chopped
- 2 teaspoons dried oreganum
- 60g lean bacon, chopped (2 rashers, back or leg bacon)
- 1 tomato, chopped
- 180g lean ham, chopped
- 3 tablespoons chopped parsley
- Freshly ground black pepper to taste
- 5ml Dijon mustard
- 3 tablespoons cake flour
- 125ml low fat cottage cheese
Method
- Pre-heat the oven to 180°C and lightly grease a 200 x 200cm ovenproof dish with non-stick cooking spray.
- Beat the eggs and milk together and set aside.
- Heat the oil and sauté the chopped onion and pepper until soft. Add the chopped bacon and fry until crisp. Add the chopped tomato and stir through.
- Add the rest of the dry ingredients (except the cheese), as well as the egg-milk mixture.
- Pour the filling into the greased dish and sprinkle the cheese evenly over the top.
- Bake for 45 minutes until the filling is set.
