Protein pancakes

Ingredients
- 1 large banana
- 1 cup oats, raw
- 3 large eggs
- 2 tbsp low fat milk
- 1 tsp baking powder
- Pinch of cinnamon
- 1 scoop or 30g whey protein powder (providing 21g protein)
Method
- Mix the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender or NutriBullet for 1-2 minutes until smooth. Make sure the oats have broken down, if not blend for another minute.
- Heat a drizzle of oil in a pan. Pour 2-3 rounds of batter into the pan, leaving a little space between each pancake to allow for spreading.
- Cook for 1-2 minutes until bubbles start to appear on the surface and the underside is golden.
- Flip the pancakes over and cook for another minute until cooked through.
- Serve.
