Protein pancakes

Ingredients

  • 1 large banana
  • 1 cup oats, raw
  • 3 large eggs
  • 2 tbsp low fat milk
  • 1 tsp baking powder
  • Pinch of cinnamon
  • 1 scoop or 30g whey protein powder (providing 21g protein)

Method

  1. Mix the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender or NutriBullet for 1-2 minutes until smooth. Make sure the oats have broken down, if not blend for another minute.
  2. Heat a drizzle of oil in a pan. Pour 2-3 rounds of batter into the pan, leaving a little space between each pancake to allow for spreading.
  3. Cook for 1-2 minutes until bubbles start to appear on the surface and the underside is golden.
  4. Flip the pancakes over and cook for another minute until cooked through.
  5. Serve.
