Sweet Potato Brownies

It sounds foreign and strange, but trust us it tastes delicious. It is an ideal snack for someone who is watching their sugar intake but are still craving a sweet treat. It is also high in fibre and powerful anti-oxidants thanks to the sweet potato. You can thank us later!

Sweet Potato Brownies

Ingredients

  • 1 x 400g sweet potato, or 3 cups if grated
  • 2 medium (100g) eggs
  • 2 tsp (10g) vanilla essence
  • ⅔ cup (125g) sweetener like erythritol
  • ½ cup (125g) coconut oil, melted
  • 1 cup (100g) cacao, sifted
  • 1½ tbsp (20g) baking powder
  • ½ tsp (2g) bicarbonate of soda
  • Pinch of salt
  • 2 tbsp (30g) apple cider vinegar
  • 2 tsp (5g) coconut flour

  • Melted dark chocolate
  • Strawberries
  • Homemade ice-cream

Method

  1. Pre-heat oven to 180°C. Grease a square 18cm baking pan and line with baking paper.
  2. Mix the sweet potato, eggs, vanilla essence, erythritol/honey and coconut oil. Mix well in a mixing bowl.
  3. Mix in the cacao, baking powder, baking soda, salt and apple cider vinegar. Lastly add the coconut flour.
  4. Pour the mixture into the prepared pan. Bake for 26 minutes or until cooked but slightly moist inside. Leave to stand for 5-10 minutes to cool.
  5. Using a sharp knife cut into 16-20 squares and carefully remove from the pan.
  6. Drizzle some melted dark chocolate over the brownies.
  7. Serve with some fresh strawberries or homemade ice cream.
